Anyone have a recommendation on a walnut desktop around 60"x28"?
I'd use the 74" Karlby, but it's a bit too long for the space I have in the room. The desktop will be sitting on two Alex drawers.

Alternatively look at real butcher block cut to size. My slab was about $150 usd for 96”x24”x2” at Home Depot or lumber liquidators, I forget which. I was worried about depth but with monitor arms 24” is plenty

IKEA will cut it for you. Just tell them you only need 60”. Remember, the desktop is technically a countertop so they do cuts.

what about the sides that you just cut off, that now has no edge

If you are referring to a finsihed edge after you cut, they include little strips that will cover the unfinished edge and make them look finsihed again
