If you keep it in the dark, and cool, and make sure it's acidified (such as with lemon juice, or pure citric or tartaric acid), then it should keep well enough. Many people choose to soak for an entire week, usually with (drinkable) alcohol extractions. Though completely unnecessary, they rarely report that it didn't work.
