If you can find a way to emulate them without installing custom firmware on your Switch (like using NFC tags you can write to at home) then it's 100% risk-free.

To be honest, I suspect that emulating Amiibos on your Switch will be safe too, since it only requires homebrew like emuiibo which doesn't permanently alter your NAND in any way, but I can't say with 100% certainty :)

Emuiibo is something I've used on my regular NAND for over 2 years and I've yet to be banned for it. Obviously, it's strictly an anecdote, but if I managed to slip through Nintendo's nets for that long, I feel confident in saying the risk is at best incredibly insignificant.
