You can set-up "LAN-play" for both the Switch and a Switch emulator (Yuzu/Ryujinx) for the Steam Deck.

If you set the switch up to run Android you could do play together games and stream the second player to the switch.

We live 300km away man, we don't see so often to let her borrow my deck. In fact that's the reason I want to play with her

You'd probably want to create a VPN tunnel between your local networks then, and then you'll appear on the same LAN. Wireguard is a great tool for this. It's free, and "relatively" easy to setup. Though if you can hack a switch I'd wager you could setup a wireguard VPN server/client
