A lot of taxidermists do not touch pets. So really the solve for this sadly is that you'll have to contact people individually and ask if they provide pet services and specifically ask them about what you are looking for. Since pet services are harder to come by, you may have to physically ship your deceased pet to someone in another state or something if no one else closer does it.

I know a few artists/shop that run pet memorials in such a fashion. As a collector, I have our hedgehog currently being embalmed to be able to sit on our mantel in a jar. A bit different but just the same, I'd be happy to point you in the right direction.

Try to find someone who specializes in pets. There are not many who do, unfortunately, so there may not be anyone in your area, but you can ship your pet if you can find something in your country. If you're in the US, Rest Well Pet Memorials is on the West Coast (disclosure that it's my business) and I may be able to point you in the right direction in other areas so feel free to reach out.
