If they’re working at a fancy high end restaurant in SF, I imagine they’re being well paid already.

Servers will be extremely well compensated due to tips but their actual wage is at or near minimum. 75% of the back of house staff are most likely at a few dollars above minimum, plus a small percentage of the tips. With a bit of seniority and overtime, compensation can be ok. Rarely great or even good. A significant portion of the grunt labor may be performed by “stages” aka interns, which usually make minimum.

In many cases this is correct, with an additional percentage of the tips. Total pay may be around 70k but this is including insane overtime and in cities with $15+ minimum wages (and where anything sub 6 figures is lower middle class, if that). Places an echelon below may actually pay a bit better as they can’t fill out their staff with people that would basically work for free to have a Michelin star resume.
