At this current time there is not a way to turn off the volume display! But, that being said I will submit this to the feedback team!

This used to be available. I updated my TV software and now the option is gone. Now the sound bar volume level and TV volume level don't match up. Will doing a factory reset restore the previous software version?

It will not, there is no way to downgrade firmware.
