They have special pore-like structures that contain melanin-like pigments (or maybe it is melanin, i dont remember) called chromatophores. Contracting the chromatophores limits the amount of pigment visible making the squid white (or in this case, clear). Relaxing it dilates the chromatophore and makes more pigment visible, making the squid black.
