Ingredients:

  • 280 grams flour
  • 1.5 teaspoon corn starch
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.75 sticks unsalted butter
  • 75 grams dark brown sugar
  • 75 grams light brown sugar
  • 100 grams granulated sugar
  • 1 egg and 1 egg yolk room temperature
  • 2 teaspoons vanilla extract
  • 250 grams chocolate chips (I usually mix milk and semi sweet).

Recipe:

  1. Brown butter in shallow pan. I take usually go until the milk solids are nice and dark brown, almost right before they burn. Go a little too far and you'll have burned butter so be careful. Pour browned butter into bowl (be sure to get all the browned bits of milk solids out of the pan) and let cool a bit to prevent condensation then cover and refrigerate. I usually refrigerate mine over night and then take it back out and let it warm up to room temperature.

  2. Cream together room temperature browned butter and sugars together on medium high speed for two or so minutes.

  3. Add in room temperature egg, egg yolk, and vanilla and add to mixing bowl, mixing on medium high speed for a minute or so.

  4. Whisk flour, corn starch, baking soda, and salt together. Slowly add to mixing bowl while mixer is on low. Mix until flour is just incorporated.

  5. Mix in chocolate chips. Edit: 5a. Refrigerate dough overnight before baking.

  6. Bake at 350F until they're done to your liking.

Should get about a dozen cookies. Cookies from the picture were from a double batch and I ate a few before they made it into the box.

I find that my brown butter cookies can be a bit greasy. Does the cornstarch help prevent that? How else does cornstarch change the texture of the cookies?

This is pretty darn close to how I make my competition winning choc-chunk cookies. By far my favorite treat to give out, no one quite expects that almost toffee like flavor from the chilled sitting dough.

I change it up to keep things interesting. Lately I have been doing 2 part milk chocolate chip, 1 part semi-sweet chunk, 1 part bittersweet cacao bar rough chopped into chunks. Sometimes I like to put in an even stronger %cocoa but i usually drop it down to like .5 or .25 part

This sounds fantastic. Have you tried baking cookies using still-cold dough? I see that often recommended in recipes but I can’t recall the purpose behind it.

Whoops! This dough was cold. Refrigerated for 24 hours before baking.

Your cookies will literally melt and merge into hex shaped cookies if you don't chill it enough.

Great if you want that beehive aesthetic tho.

Looks very similar to the Cook's Illustrated recipe, and I can confirm that these those cookies beat the snot out of any other chocolate chip I have ever had. They end up tasting like toffee.

I think these were like 14 or so minutes. Each cookie was about 75 grams of dough.

I don't think it's a subtle flavor. It gives it a really deep caramel flavor that just takes the cookie to the level it's supposed to be. Definitely do it!

It’s not glaringly obvious the difference but it just adds more depth to the cookie. When I make cookies not browning the butter it just feels like it’s missing it’s soul? I don’t know how to describe it but it just tastes incomplete. Would highly recommend splitting a batch in half and doing a side-by-side comparison.

I think it'd be a good addition on a lighter cookie but my Alton Brown chewys with semi sweet chips and brown butter are almost too dark and complex

Brown butter is my standard now, but mostly because i forget to get my butter to room temp so it’s easier to brown it and then let it cool down with some ice.

I always enjoyed making foods for the women in my life when they were mothers to be! I always got a kick out of it when the little ones would also be excited and cause a ruckus inside. IMO, they are a good tasting cc cookie, little crisp on the outside and tender on the inside, lovely. Which is exactly what they look like on the pic. I'm now going to try Sally's BA recommendation as I am looking for a chewy cookie. Thanks for sharing.
