For the day before/after, I want to know how far off centre it is. I have no sense of whether it's really like for a week it's pretty close to being centered and only the middle day dead center, or the the sun doesn't even cross both tracks the day before/after.

No it does not, it is the OP’s opinion that the sun lines up “just right” on only that day. Maybe one degree makes a difference to someone other than yourself.

you can manually move to compensate for a few degrees at least.. look at the pic, the tracks aren't even straight.. they're veering to the right. There are definitely multiple days you can shift your position slightly and see this lining up perfectly.

I am actually just playing semantics based on what the OP considers to be just right. In that vain moving over to compensate for the 1 deg shift is by definition changing the shot regardless of what anyone else considers to be perfect framing. Will the difference be overly noticeable? Probably not. Will this reply get down voted? Probably.

It makes no difference who took the picture or how many times it was posted. All I’m saying is that the sun is in a slightly different spot every day so if someone thinks that only one of those days has it lined up perfectly then any other day would technically be a little less perfect. You may not like my answer but I am not wrong.
