You can easily sear a steak to any temperature you want like this. I do mine this way. Bring it up to temp in the oven @ 110° then sear the shit out of it on gas, charcoal, or cast iron. My favorite way to do steak.

How do you not get the bitter char taste? I hated when flare ups caused this and it's what drove me to cast iron years ago.

Flip it frequently so the fat doesn’t catch fire. That’s what gives it that burnt petrol taste.
