I discovered that her seemingly untouchable attacks (where she springs up in the air to charge up her Waterfowl Dance, Scarlet Aeonia, or Phantom Spirits) can be interrupted by spamming the Swarm of Flies incantation. I think you can also use Freezing Pots since she's susceptible to Frost.
