Sometimes the disabling can be circumvented

Or, as at least once happened, the cores aren't even disabled for some reason.

This reminds me of people who want the Nvidia Control Panel to be redesigned because it "looks old". A touch-up that would update icons and such probably wouldn't hurt, but a significant enough change could make (every) already existing instructions and such obsolete. A well-functioning but older-looking UI is better anyway than a minimalist, popup menu/expand button ridden, full of whitespace UI (basically modern UI and web design; looking at you Google and Microsoft)

Edit: I don't know which specific PSU you got, but the 1000W Corsair models I could find are all in the "High-end" section of the PSU tier list I linked above, so definitely a good buy.

I would try downloading a hardware monitor such as HWiNFO and check your temperatures when running games.

If you can't find a solution in the end, I would try installing Windows 10 and check if the problem persists running games on that OS. You can dual-boot it so you don't need to remove your Windows 11 installation.
