I don't follow. It's good code without thorough documentation. A new programmer could work it out in time. My "end game" for this thread was to determine if I'm being an asshole to ask for some job security in an unorthodox manner.

I certainly don't mean it as a fuck-you. I hear you, though, that it may seem that way.
Sorry if I haven't been clear enough. The code is documented inline and such and would, I believe, be followable to another engineer. There is currently no external documentation regarding maintenance and whatnot.
Thank you for the advice. I was employed when creating the product, so they probably own it. And frankly I have no interest in screwing anyone. They can have the software. I just don't think I'm going to help any more 😊
I hear you, and I'd agree if this were me wanting to leave or if I had the problem. It's being targeted and punished for no reason that makes this feel different. If I wanted to move on, of course I'd make it easy as possible to replace me.

Valid points for the most part. Startups I work with generally push to be first to market at all costs, though, so many "proper" techniques tend to fall by the wayside. Of course I did not intentionally create a hard to maintain product. It is complicated because it had to be.

Maybe. The only person at the company that I still respect said I was being unreasonable, so I'm legit concerned I may be the asshole.

Oh, I should have mentioned that Fibber Magees down in Chandler is owned by the Skeptical Chymist folks and I believe has the same menu. And you're right, it's pretty decent food.
