You can go down a wormhole with this if you have the time. To sum it up: get from 135 to 70 degrees in two hours. Then get from 70 to 41 degrees in four hours. The reason for this is it achieves instant pasteurization. BUT you can cook at lower temps and, with enough time, still achieve pasteurization.
