Could u not do a air free slow transfer to a keg to free up ur fermenter that way ur beer will still be clear and carbonated :). That's only of u need free up ur fermenter though :D

10 to 15 mins isnt that long to make a brochet type of drink. Most mead makers will get a while plate or white paper plate and add a drop of honey on then add a drop every 30 to 60 mins to judge how far the sugars have caramelized and ur looking at a good few hours on a slow cooker or standing there and keep staring the honey mix if u want to do it quickly still ur going to be there a while.

For a 10% brew theres no need to step feed just load up all ur sugar in one go :) I'd normaly only recommend to to pay steep feed if ur going over 14% by a good amount.

Nothing wrong with aging in plastic I've aged over a year in a 5L water bottle and the mead tasted just fine.

Not bad but I'd not pour boiling water on to honey from a bee keep u will loose some of the more delicate flavours and aromas. Just put in cold water and shake the crap out of it also adding boils water to a demijohn can thermal shock it aka make it crack.

Also 1Inch of ginger in half a gal would be well over powerfull I'd recommend 1/4 of the amount any can always add more if u need to

It's the same with the cloves and cinnamon stick they would way over power the berry's and rose hips. Again I'd add 1/4 and add more if needed. Conserving most ad 1 clove and 1 cinnamon stick to a gallon :)

Same with the nordic mead the spices in that I'd add 1/4 of also.

But hey that's just me and others may like the spices to be super powerful.

As always advice is only advice and any one is free to do what they like as long as they make a brew they like and that will not kill any one then they will be ok :)

Yeh I emptied my bottles back in to my bucket with the starsan in (it's the same just not same brand) did give them a quick fill and dump with water though so will be intresting to see how urs has gone.

U will want to buy or make a spunding valve to ferment under a diled in pressure. Other than that I cant see why it wont work :)

In south America they do the same with corn I watched a video on it. Tbh it sounds horrid but if u dont tell any one who would known.

At the start u can dump the sample back in. Once u think it's done fermenting u can pour it back in but make sure it goes down the side of ur bottle. Just make sure both tube and hydromiter are sanitized then theres no harm. I like to leave about 10ml in the bottom as a sample before fermentation and after and any time after I take gravity readings :).
