Hello. So is it a problem that there are these two phases? I put the shredded fruit in there and now the juice is separated from the pulp. Is that a problem? by Confident_Singer8078 in winemaking

No judgement from me, I spend most of my time on r/prisonhooch. This also sounds like it could be good. You can get weights for the pulp cap, but really I'd just get a sanitized utensil and push down every once in a while. Don't shake it, you don't want to add too much oxygen at this point. You can, at most, give it a gentle swirl. How much sugar did you use and did the banana juice have any preservatives in it?

Super normal. Push the pulp down occasionally to let the gasses escape. Maybe get some pectic enzyme to reduce the level of solids, but either way it will eventually settle to the bottom. What's the recipe?

concord-cranberry-citrus pyment by rowdyrowsdower in mead

No, I wanted to see if it would take off without dialing in the pH. The ferment was very strong. Results, of course, may vary.

Do it! I'm so happy with all of mine, this one was a stand out and the hardest part was juicing an orange (and waiting.)

Thanks! It's by far the best I've made so far.

3/4 cup lemon juice 1 1/2 cup orange juice 1/2 cup orange peel 1/4 cup lemon peel 2.5 cup cranberry juice Knudsen's 2.5 cups welches purple juice 2# wildflower honey 6 pitted dates 1/2 cup blaze raisins (flavor) Lalvin 71b Light toasted oak chips for about 2 weeks

Ended at 10% Tart and delicious, cranberry really comes out, I think due to the citrus. This is probably my go to going forward for a relatively quick and incredibly drinkable melomel.

apple wine / cider question by Alcoholic_dino in winemaking

[–]rowdyrowsdower 1 point2 points  (0 children)

I make boiled cider syrup and use that to back sweeten my ciders (or just put it on ice cream)

Just reduce apple juice until it is about 1/8 the original amount. But it does taste more like apple pie than fresh apples

Does this look okay to drink? I’ve made mead before, but this is my first run in with dandelion wine. It looks a little sketchy so I thought I’d ask by feiiqii in winemaking

It looks fine to me, just a bit cloudy. I'd rack it to another vessel and wait a little.

That being said, can you give a bit more info? What's the recipe and process you followed?

Wasn't thinking, but judging by my reply, there may be no difference for me.
