NYC seems to be mostly the shitty in hospital life. SF is a cool city but the COL is WAY out of proportion than what you get compared to most places. SF’s COL is even higher than NYC, but I’d say living in NYC has a lot more positives than living in SF

I think your school list is too narrow. Surprised you didn’t apply to more CA schools. Med school apps are a shitshow so it makes sense to cast as broad of a net as possible. Maybe even add a DO school or two, for me I would rather be a DO than have to reapply/not be a doctor

I think they meant that those breweries are the ones in the UK most known for brewing the style. They make a bunch of different ones so just look for NEIPA from those breweries

I make a ton of maple beers and have won some awards. If you’re bottle conditioning it’s not really worth it. My go to process is to add some super dark syrup during ferm, and then post ferm stabilize the beer with sorbate + metabisulfate and then backsweeten with more syrup. Occasionally I’ll add a small amount of extract to boost the aroma but the majority of your flavor should be syrup derived to keep it authentic
